Collegiate Eats: Spicy Ranch Dip with Bacon;

January 24, 2012

Being a college student, I'm obviously limited in the kinds of food I can make on my dorm room. A) There isn't very much space in that mini fridge or food drawer. B) With no oven, I can't exactly bake anything. Plus, we aren't allowed to have anything much more complex than a microwave. No food processors here. C) You can't get too much fancier than easy mac, warmed up pop tarts, and cereal.

So I like to pride myself when I find something easy to make and relatively yummy. That's the main goal of 'Collegiate Eats.' So simple and affordable that even a college gal can make it!

Today, I'm going to tell you how to make a Spicy Ranch with Bacon Dip that's super yummy. I'm on my second batch and still snacking strong! It isn't super spicy at all, it just has a little kick! It's thrown together really easily, with no super precise measurements and can be adjusted as you like!

For under $15 you can make: Spicy Ranch with Bacon Dip!

Serves
1-2 People

Ingredients:
-Sour Cream
-Cream Cheese
-Ranch
-Feta Cheese
-Bacon Bits
-Jar of pickled Jalapenos

Procedure:
1. In an everyday sized microwave safe cereal bowl mix together 4 spoonfuls of sour cream, 1/4 a block of an 8oz cream cheese bar, and enough feta cheese to form a small layer on top.

2. Microwave for 35-45 seconds. Mixture will make a popping noise.

3. Take out and mix with a spoon until relatively smooth.

4. Stir in ranch while mixture is still warm. Amount of ranch will depend on your own preference. I usually mix in about 1 and 1/2 to 2 cap fulls (use the lid that comes on the ranch to judge). Adjust accordingly

5. Stir in 1 cap ful of Jalapeno juice from jar. Adjust if needed.

6. Cut up 4-5 Jalapenos to mix in (add more or less depending on your preference)

7. Add about 1/3 a bag of bacon bits to the mixture so that they're dispersed through out the entire dip

8. Let sit in the fridge over night (or for a few hours) to thicken up

9. Enjoy with crackers!
